~Country Chicken And Dumplings~

1 pkg chicken breast cooked

2 cans of refrigerator biscuits

Cornstarch

Water

Salt and pepper to taste

 

Cook chicken until tender.  Cut up in good bite size pieces and put into a large bowl.  Take the broth the chicken was cooked in and strain into a large pan.  Add water as needed and bring to a boil.  When boiling motion starts open can biscuits and flatten each one out then drop each into boiling broth.  As each dumpling cooks until firm, remove from broth

and place on top of the bowl of chicken.  When all the dumpling's are  in the bowl of chicken thicken the remaining broth with water and corn starch and add gradually until the broth is as thick as you want.  Add salt and pepper to taste and pour in the bowl of chicken and dumplings.  You may also use mixed vegetable with the chicken if you would like for a meal in one.  Serve while hot.  Yields four generous  servings.

~Country Stew Beef~

 

1 pkg stew beef (cut to size you like)

1 pkg frozen mixed vegetables

1 large potato cut in chunks

1 medium onion cut up

Dab of brown gravy coloring

Salt and Pepper to taste

 

Add above in the amount of water you feel

you need for your soup.  I use approximately

eight cups of water for four servings.  When

beef is done, the vegetables should also be done.

Check the potatoes with a fork to tell if they are done.  Mix half a cup of corn starch in measuring cup and fill remaining cup with water and mix.

While stew is finished cooking, bring to a boil and gradually add the corn starch gradually until you reach the thickness you like.  This should yield four generous servings.

You may use this recipe in a crock pot also. If you put it on by 8AM in the morning it should be ready

by five or so.

~Yummy Cheese Ball~

 

2 c. sharp cheese grated

2 8oz pkg. Philadelphia Cream Cheese

1 tbsp. pimientos chopped

1tbsp. green pepper chopped

1tbsp. onion chopped

1tsp. Worchestershire Sauce

1tsp. lemon juice

Dash of salt

Chopped pecans

 

Combine softened cream cheese and sharp cheese

mixing until well blended.  Mix in all other ingrediance and mix well.  Chill and shape into a ball.  On wax paper roll cheese ball in chopped pecans.  Serves with crackers.  A great snack and a hit at gatherings.  Serves appx. 75
