~My Homemade Chocolate Éclair~

1 box plain graham crackers

1 large instant french vanilla pudding

3 cups of milk

1 small container Cool Whip

1 can chocolate fudge icing

 

Layer the bottom of a 13x9x2 inch Pyrex dish or pan

with crackers.  In a bowl mix the pudding, milk.

Stir until pudding starts to thicken then add cool whip

fold all together and pour 1/2 into pan on the crackers.

Add another layer of crackers on pudding mix and pour

the rest of the pudding mixture on top.  Add one last

layer of crackers on top.  Microwave the fudge icing

for 10 to 15 seconds.  Spread the icing on top of the last

layer of graham crackers.  Refrigerate overnight.  Can

be cut in squares.  Great for parties or family get togethers.

Serves approximately 12 to 15 squares depending on

the size cut.

 

 

~My Mom's Plain Cake~

 

 

2 sticks margarine softened

2 table spoons of shortening, heaping

2 1/2 cups of sugar

5 eggs

2 3/4 cups of flour

1/2 teaspoons salt

1/2 tablespoons baking power

3/4 cups milk

2 tablespoons lemon extract

 

Cream together margarine, shortening and sugar.

Add remaining ingredients then mix until you have batter.

Pour into a tub pan.  Bake at 350 degrees until slightly brown on top.

You may eat plain or add icing or glaze on top.
