"FROM GINNY"

~My Easy Apple Pie~

 

1 Store bought prepared pie crust

or

1 box of pie crust mix

2 cans apple pie filling

5 pats of butter and

Sprinkle cinnamon and sugar

on top of apples

 

Preheat oven to 425 F.  Line 9" pie pan

with pie crust.  Pour apple filling evenly into

crust.

Roll out another crust or make a crumble

for the top of pie.  Make about five vents in

top of crust with a pointed knife.

Crimp edges to seal.

Bake for approximately 15 minutes

Reduce heat to 325 F and bake an additional

30 minutes until crust are brown.

Serves 6 to 8

 

 

~My Baking Powder Biscuits~

 

2 c. flour

4 tsp. baking powder

4 tbsp. shortening

1 tsp. salt

1 c. milk

 

Mix flour, baking powder, warm milk and salt;

add shortening, blending in well until easily

handled dough is attained.  Kneed on a well flowered

cutting board.  Pinch off dough the size of biscuit you

want and roll in a ball and pat into a flat biscuit.

Place in a bread pan and bake 15 to 20 min. in a

325 degree oven.  Remove when browning on top begins.

 

 

~My Baby Lima Bean And Corn Soup~

 

1 large bag of baby lima beans

1 large bag of white shoe peg corn

2 medium potatoes diced

1 medium onion cut up

5 slices of bacon

Salt and Pepper to taste

 

Combine all above together in large pan

Add enough water to make soup

as it does not require lengthy cooking nor does

it thicken itself.  Soup will be ready when limas

and potatoes are done approximately 45 minutes

once it start to boil.  When ready to eat remove

bacon strips.  You can half this soup for a smaller

family or cook as above and freeze left over soup.

Even better when defrosted.

Serves approximately six to eight people.
